Loved this and all the reference. I am a Californian living in Italy and it's so easy to have rose tinted glasses and nostalgia for my homeland, but great to be reminded of some of the darker parts of our food culture.
I’ve grown up in the Bay Area food scene, and I have to thank you for articulating all of these swirly thoughts I’ve been having for the past few years. The concepts and people I have been taught to venerate, the growing dis-ease with our own complicity...
